Roasted malt, dark chocolate, and espresso up front. A whisper of vanilla and oak from 12 months in Kentucky bourbon barrels rounds the finish. Sip slowly. This one earns it.

Pillowy soft and juice-forward. Massive additions of Citra, Mosaic, and Galaxy hops give this NEIPA an aroma that hits you from across the room. Low bitterness, maximum flavor.
Crisp, clean, and quietly brilliant. A traditional Munich Helles brewed with German Pilsner malt and Hallertau hops. The kind of lager that makes you appreciate what restraint can do.

A rotating lineup brewed to capture each moment in the East Tennessee calendar — including our annual Oktoberfest.

Our traditional German-style Märzen, brewed for the season of steins and long tables. Rich toasted-malt body, bready depth, and a clean lager finish. Brewed for our annual Oktoberfest — raise a mug while it lasts.
Light and effervescent with classic Belgian yeast character — peppery, fruity, and bone dry. Brewed with locally foraged elderflower. March through May.
Every batch follows the same four steps. What changes is the obsessive attention to detail at each one.
Whole grain malts are milled fresh before each batch and mashed at precise temperatures to convert starches into fermentable sugars. The grain bill defines the beer's color, body, and malt character.
The wort is boiled for 60–90 minutes. Bittering hops go in early for balance; aroma hops are added late — sometimes after the flame-out — to preserve volatile oils and aromatics.
Yeast strain selection is Jake's obsession. Each strain has its own temperature profile, flavor compounds, and ideal fermentation window. We never rush it. Fermentation takes as long as it needs to.
Conditioning refines the beer — smoothing edges, clarifying flavor, building carbonation. Barrel-aged beers spend up to 12 months in bourbon barrels. Everything else is conditioned to style before hitting the tap.
